Pot Roast with Carrots and Potatoes

Ingredients - Roast

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 3lb chuck roast

Ingredients - Braise

  • 2 cups b red potatoes
  • 2 cups carrots – 2” pieces
  • 2 cups onions – 2” pieces
  • 1 teaspoon chili powder
  • 1 cup sherry or red wine
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme
  • 2 dried chipotle peppers
  • 2 cups beef broth or stock

 

Directions

  1. Make the roast.  When ready to cook, set smoker temperature to 180 F and preheat with lid closed for 15 minutes.
  2. In a small bowl, combine the roast ingredients – rub all over the chuck roast.
  3. Place chuck roast directly on grill grates.  Close lid and smoke for 1.5 hours.  Remove roast from grill and increase temperature to 275 F.
  4. Transfer chuck roast to a dutch oven.  Add potatoes, carrots, onions, chile, sherry, rosemary, thyme, peppers, and broth to the dutch oven.
  5. Put lid on dutch oven and transfer to grill.  Close lid and braise until meat is very tender, 4-5 hours.
  6. Serve with your favorite vegetables or mashed potatoes.
